hit your protein goals without sacrificing flavor! i love to make an adult lunchable with this, crackers, grapes, and baby carrots. (i don’t include all the veggies she has in the recipe, but use the base chicken salad recipe to add what i like to in my cottage cheese: celery, grapes, and my secret ingredient—ranch seasoning.)

my cookclub cooked from good things by samin nosrat last month (every single thing was amazing, don’t you love that in a cookbook!). the standout dish for me was this soup, and i couldn’t resist making it ASAP. do not skip the thai-inspired snack on top!

my husband’s newest single is out! save the date for the release of the album, over the mountain, on april 24! if you like being in the woods, biscuits and gravy, or tapping your toe to the beat, you’re gonna like this album.
